Vegetable Manchurian

 Ingredients

For Manchurian Balls

¼ cup Spring Onion Greens, finely chopped/हरा प्याज़

¼ cup Cabbage, finely chopped/ पत्ता गोभी

¼ cup Green Beans, finely chopped/ हरी फली

¼ cup Carrots, finely chopped/गाजर

1 inch-Ginger, finely chopped/अदरक

Salt to taste/नमक स्वाद अनुसार

1 tsp White Pepper powder/सफ़ेद मिर्च पाउडर

1 cup Refined Flour/मैदा

2 tbsp Cornstarch/कॉर्नस्टार्च

Oil for deep frying/ तेल

 For Gravy

2 tbsp Oil/तेल

1 inch-Ginger, finely chopped/अदरक

3-4 Garlic Cloves, finely chopped/लहसुन

2-3 Green Chillies, finely chopped/हरी मिर्च

½ tsp Soy Sauce/सोया सॉस

Vegetable Stock, as required/ वेजिटेबल स्टॉक

¼ cup Spring Onion Greens, finely chopped/हरा प्याज़

¼ cup Coriander Leaves, finely chopped/धनिया

1 tbsp Cornstarch slurry/कॉर्नस्टार्च स्लरी

Prepared Manchurian Balls/बने हुए मंचूरियन बॉल्स

 For Manchurian Dry

2 tbsp Oil/तेल

1 inch-Ginger, finely chopped/अदरक

3-4 Garlic Cloves, finely chopped/लहसुन

½ tsp Soy Sauce/सोया सॉस

¼ cup Spring Onion Greens, finely chopped/हरा प्याज़

¼ cup Coriander Leaves, finely chopped/धनिया

½ tbsp Cornstarch slurry/कॉर्नस्टार्च स्लरी

Prepared Manchurian Balls/बने हुए मंचूरियन बॉल्स

 Process

Manchurian Balls

  • In a mixing balls, add all the ingredients, mix well.
  • In a kadhai, heat oil for deep frying.
  • Fry manchurian balls till golden brown and crispy./सुनेहरा होने तक तले!
  • Remove in a kitchen towel. Keep aside for further use.

 Gravy

  • In a wok/kadhai, add oil.
  • Add ginger, garlic and green chillies, mix well and cook for 2 minutes.
  • Add soy sauce and vegetable stock, mix well.
  • Add spring onion greens and coriander leaves, mix well and cook for 2-3 minutes.
  • Add cornstarch slurry, mix well and let it come to boil.
  • Add Manchurian balls, mix well and let the gravy thicken./गाढ़ा होने तक पकाये!
  • Serve hot with choice of your rice.

 Manchurian Dry

  • In a wok/ kadhai, add oil.
  • Add ginger, garlic and green chillies, mix well and cook for 2 minutes.
  • Add soy sauce, mix well.
  • Add spring onion greens and coriander leaves, mix well and cook for 2 minutes.
  • Add cornstarch slurry and mix well.
  • Add Manchurian balls, mix well and cook for another 2 minutes.
  • Serve hot.
