Veg Masala Quinoa

Ingredients

  • 1 tsp oil
  • 1 tsp mustard seeds
  • 1 tbsp cashew nuts
  • 1 tbsp bengal gram
  • 1 tsp garlic, chopped
  • 1 green chili, sliced
  • 1 onion, chopped
  • 1 cup french beans, small cubes
  • 1 cup, carrots, small cubes
  • ½ cup green peas
  • ¼ tsp tumeric
  • 1 tsp cumin seeds powder
  • 1 tsp coriander seeds powder
  • 1 tsp red chili powder
  • salt to taste
  • 1 cup quinoa

Process

  • Heat oil in pan and crackle some mustard seeds, cashewnuts, bengal gram. Add garlic, green chilies, onion and saute until turns light pink.
  • Now add vegetables, salt and spices. Saute for 2-3 minutes; then add quinoa and add hot water.
  • Cover and allow it to cook until all the water is absorbes.
  • Squeeze lime juice and sprinkle coriander leaves.
