Thai Quinoa Salad with Chili Lime Dressing

Ingredients

1 cup Quinoa, cooked

½ cup Red bell peppers

½ cup Carrot, dices

½ cup Cucumber, dices

¼ cup Scallions, cut diagonally

Few Basil leaves

½ cup Broccoli, cut into florets and blanched

 

For the dressing

2 tbsp Lime juice

2 tbsp Sesame Oil

1 tsp honey/Brown sugar

½ tsp lemongrass paste/ginger paste

2-3 basil leaves, sliced

1 ½ tsp Birds eye chilli, chopped

½ tsp Soy sauce

 

Method

  • Take a mixing bowl and all the ingredients for the salad; & mix well.
  • For the dressing, take all the ingredients and whisk it well.
  • Add the prepared dressing to the salad and toss everything together.
  • Garnish with a sprig of basil leaves and serve.
