Tari Wale Aloo with Wadi ka Masala

Ingredients

For Frying Wadi

3 tbsp Ghee (घी)

4-5 Wadi – crushed (वड़ी)

 

For Tempering

Remaining Ghee (घी)

1 inch Ginger – chopped (अदरक)

2-3 cloves Garlic – chopped (लहसुन)

1 fresh Green or Red chilli – chopped (हरि या लाल मिर्च)

1 medium Onion – chopped (प्याज़)

½ tsp Turmeric Powder (हल्दी पाउडर)

¼ tsp Asafoetida (हींग)

3-4 Potatoes – cut into big cubes (आलू)

Salt to taste (नमक स्वादानुसार)

Fried Wadi Powder (तली हुई वड़ी का पाउडर)

2 tbsp Coriander Leaves – chopped (धनिया पत्ता)

½ small Lemon juice (नींबू का रस)

 

For Garnish

Fresh Coriander Leaves (धनिया पत्ता)

 

Process

For Frying Wadi

  • In a pan heat ghee and add wadi, fry it until golden brown in hot ghee.
  • Now remove and keep aside and let it cool down a little. Then put in a grinder jar and grind it into a fine powder. Keep aside for further use.

 

For Tempering

  • In a kadai heat the ghee again and add ginger, garlic, green or red chilli, onion and saute until translucent.
  • Now add turmeric powder, asafoetida and sauté for half a minute then add potatoes, water mix and cook it until soft.
  • Now add the fried wadi powder and cook it on medium heat until thickened.
  • Then finish with coriander leaves and lemon juice. Serve hot.
