Stuffed Tomato

35-40 minutes
Prep: 15 minutes | Cook: 20-25 minutes | Servings: 4

For Stuffing

2 tbsp Oil (तेल)

1 tsp Cumin Seeds (जीरा)

½ tsp Fennel Seeds (सौंफ)

¼ tsp crushed Coriander Seeds (टूटे हुए धनिया के बीज)

1 inch Ginger – chopped (अदरक)

2 fresh Green Chillies – chopped (हरी मिर्च)

2 medium Potatoes – chopped (आलू)

Salt to taste (नमक स्वादानुसार)

½ tsp Turmeric Powder (हल्दी पाउडर)

½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

½ tsp Coriander Powder (धनिया पाउडर)

100 gm Paneer – chopped (पनीर)

¼ cup fresh Green Peas – boiled (हरे मटर)

2 tbsp Coriander & Mint Leaves – chopped (धनिये और पुदीने के पत्ते)

 

For Gravy

2 tbsp Oil (तेल)

1 tsp Cumin Seeds (जीरा)

1 inch Ginger – chopped (अदरक)

1 fresh Green Chilli – chopped (हरी मिर्च)

½ tsp Turmeric Powder (हल्दी पाउडर)

1 tsp Coriander Powder (धनिया पाउडर)

¼ tsp Asafoetida (हींग)

½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

1 cup Tomato Puree (टाॅमेटो प्यूरी)

Salt to taste (नमक स्वादानुसार)

½ tsp Sugar (चीनी)

1 tbsp Butter (मक्खन)

1 tbsp Fresh Cream (मलाई)

 

For Marinating Tomatoes

1 tbsp Oil (तेल)

Salt to taste (नमक स्वादानुसार)

¼ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

¼ tsp Dried Fenugreek Leaves (कसूरी मेथी)

4-5 Tomatoes – hallowed (टमाटर)

 

For Garnish

Fresh Coriander Leaves (ताजा धनिया पत्ता)

Fried Cashew Nuts (तले हुए काजू)

Fresh Cream (मलाई)

 

Process

For Stuffing

  • In a pan heat oil and add cumin seeds, fennel seeds, crushed coriander seeds, ginger, green chillies and saute for half a minute.
  • Then add the chopped potatoes, salt, turmeric powder, degi red chilli powder, coriander powder, stir it once and add water then cover and cook until the potatoes are 70-80 % cooked.
  • Remove the lid, stir it once then add paneer and saute for a minute.
  • Now mash this mixture using a fork or a masher then add the green peas, coriander & mint leaves and mix everything properly. Keep aside for further use.

 

For Gravy

  • In a pan heat oil and add cumin seeds, ginger, green chilli, turmeric powder, coriander powder, asafoetida, degi red chilli powder and saute for half a minute.
  • Now add tomato puree, salt, butter and stir it once and let it boil for a minute on medium heat.
  • Keep aside for further use.

 

For Marinating Tomatoes

  • In a bowl add oil, salt, degi red chilli powder, dried fenugreek leaves, mix it once then add the hallowed tomatoes and apply this marination in and out of the tomatoes properly. Keep aside for further use.

 

For Assembling Stuffed Tomato

  • Firstly take the marinated tomatoes and stuff them tightly with the prepared stuffing.
  • Then place them in the gravy and put a lid on then simmer it on low heat for 10-12 minutes.
  • Now remove the cooked tomatoes out of the gravy and keep aside.
  • Take the gravy and strain it properly then add it back in the pan and finish it with fresh cream and mix it properly. And switch off the flames.
  • Now to serve, pour the gravy in the serving plate and place the tomatoes in it.
  • Then garnish with coriander leaves, fresh cream, fried cashew nuts.
