Shalgam Ka Bharta

For Bharta
¼ cup Ghee, घी
4-5 Turnips, peeled, keep whole, शलगम
7-8 White part of green garlic, हरे लहसुन
½ tsp Turmeric Powder, हल्दी पाउडर
¼ tsp Degi Red Chilli Powder, देगी लाल मिर्च पाउडर
½ cup Water, पानी
Salt to Taste, नमक स्वादअनुसार
For Tempering
1 tbsp Ghee, घी
1 tsp Cumin Seed, जीरा
1 tbsp Fresh Cream, क्रीम
For Achaar
1 cups Turnip’s Skin, julienne, शलगम
¼ cups Green Garlic, julienne, हरी लहसुन
2 tbsp Green Garlic Roots, chopped / हरी लहसुन की जड़े
2 tbsp Mustard Oil, सरसों का तेल
Salt to Taste, नमक स्वादअनुसार
½ no Lime Juice, नीबू का रस
1 tsp Red Chilli, crushed / कुटी लाल मिर्च
Process
For Bharta
- Wash and peel the turnips and keep aside the skin for achaar
- Now in a cooker add ghee let it heat and then add the peeled turnips and saute it until light golden brown.
- Turn the flame to low and then add white part of green garlic saute for a minute and add turmeric powder, degi red chilli powder mix and add water.
- Add some more ghee and salt in it, close the lid and give it a nice 4-5 whistles let it cool down and open it.
- Once cooled enough start mashing the cooked turnips, mash it into a proper mixture and even texture.
- Heat another pan add ghee, cumin seeds and let them splitter then add mashed turnips saute for a minute and then add some cream in it and mix properly.
- Its ready to serve. Enjoy it with prepaid achaar, white butter and bajra ki roti
For Instant Achaar
- In a mixing bowl add turnip skin, green garlic, green garlic roots, mustard oil, salt, lime juice, crushed red chilli and mix it properly.
- Keep aside for 10-15 minutes and the achaar is ready to serve.
