Roasted Sweet Potato & Cheese Tots

500 gms sweet potato, boiled, grated
100 gms cheese, grated
1 tsp red chili powder
1 tsp garlic powder
2 spring onion, chopped
1 cup cornflakes, blend them into crumb
Salt to taste
1 tbsp olive oil to drizzle on top
- Preheat oven to 230*C. Line a baking sheet with silicone baking mat or parchment paper.
- Add cheese, onion, salt and red chili powder, garlic powder to potato and stir to combine.
- Scoop up about 1 tbsp of the potato mixture into your hands and form into cylinders about 1 inch long. Roll them into cornflakes crumb. Place on baking sheet and repeat until all the tots are made.
- Drizzle olive oil over the top of tater tots. Bake for 15 minutes, flip them over and bake another 15 minutes until golden brown and crisp.
