Rishi Chi Bhaji (Mixed Vegetables)

Ingredients:

1 Cup Pumpkin, cubed

½ Cup Lady Finger/Bhindi, thickly sliced

¼ Cup Corn Kernels

1 ½ Cup Red Amaranth leaves/Lal Math, shredded

1 Cup Alu chi paan/Colocassia Leaves, shredded

½ Cup Tamarind pulp

½ tbsp Gud/Jaggery, soaked in ¼ cup water

3 Green chilies, slit

Salt, to taste

Process

  • In a pot combine pumpkin, lady finger, corn, red amaranth leaves and colocasia leaves. Put the pot on gas range on slow flame.
  • Add tamarind pulp and gud water, mix well. Add green chilies and salt again mix well and cover. Cook covered on slow flame for 8-10 mins. Switch off the flame.
  • Serve hot with rice or chapatti.
