Raw Mango, Onion Bhajia, Corn & Pineapple Pakoda

Raw Mango & Onion Bhajia

Ingredients

 

½ cup raw Mango, chopped & julienned  , कच्चे आम

½ cup Spinach, chopped , पालक

2 large Onion, sliced , प्याज

1 tbsp Prepared Masala , तैयार किया हुआ मसाला

Salt to taste , नमक स्वाद अनुसार

½ tsp Turmeric powder , हल्दी पाउडर

¼ tsp Asafoetida, हींग

2 Green chillies, chopped , हरी मिर्च

½ tsp Ginger-Garlic paste, अदरक लहसुन का पेस्ट

3 tbsp Gram flour (besan) , बेसन

¾ tbsp Rice flour , चावल का आटा

¼ tsp Baking soda , खाने का सोडा

1 tsp Oil , तेल

 

For Pakoda Masala

2 tbsp Coriander seeds , धनिया के बीज

1 tbsp Fennel seeds ,  सौंफ

½ tbsp Carom seeds , अजवाइन

 

Process

 

For Pakoda Masala

  • In a pan add coriander seeds, fennel seeds, carom seeds and roast it lightly.
  • Remove and crush them using a rolling pin and keep aside for further use.

 

For Bhajia

  • In a bowl add raw mango, spinach, onion, prepared masala, salt, turmeric powder, asafoetida, green chillies, ginger-garlic paste and mix everything properly and keep aside for 5-10 minutes.
  • Meanwhile in kadhai heat oil.
  • Now in the mixture add gram flour, rice flour and minutes of oil and baking soda, mix everything properly.
  • Fry small portions of the batter in medium hot oil until golden brown.
  • Serve with chutney.

 

 

 

 

 

Corn & Pineapple Pakoda

Preparation time 5 minutes

Cooking time 10-15 minutes

Serving 4-6

 

Ingredients

 

1 cup Pineapple, chopped , अनानास

1 ½ cup Sweet Corn , स्वीट कॉर्न

½ tsp Ginger-Garlic paste , अदरक लहसुन का पेस्ट

2 Green chillies, chopped, हरी मिर्च

A few Coriander leaves , धनिए के पत्ते

½ tsp Turmeric powder , हल्दी पाउडर

2 tsp Red chilli powder , लाल मिर्च पाउडर

¼ tsp Asafoetida , हींग

1 tbsp Prepared Masala, तैयार किया हुआ मसाला

½ Lime juice , नींबू का रस

Salt to taste , नमक स्वाद अनुसार

3 tbsp Gram flour (besan) , बेसन

¾ tbsp Rice flour , चावल का आटा

¼ tsp Baking soda , खाने का सोडा

1 tsp Oil, तेल

 

Process

 

  • In a bowl add pineapple, sweet corn, ginger-garlic paste, green chillies, coriander leaves, turmeric powder, red chilli powder, asafoetida, prepared masala, lime juice, salt and mix everything properly and keep aside for 5-10 minutes.
  • Meanwhile in kadhai heat oil.
  • Now in the mixture add gram flour, rice flour and minutes of oil and baking soda, mix everything properly.
  • Fry small portions of the batter in medium hot oil until golden brown.

For Chutney

 

2 cup Tender Coriander & Mint stems with leaves, chopped , धनिया और पुदीने की नाज़ुक डंडी और पत्तियां

¼ cup Raw Mango, chopped, कच्चा आम

2 Green chillies , हरी मिर्च

1 inch Ginger , अदरक

½ small Onion, chopped , प्याज़

Salt to taste, नमक स्वाद अनुसार

 

Process

  • To make chutney add tender coriander & mint stems with leaves, raw mango, green chillies, ginger, onion, salt in a grinder jar and grind it into a smooth paste.
  • Serve it with bhajia’s.
