Rasawala Aloo

Ingredients

 

For Crushed Paste

5-6 cloves Garlic (लहसुन)

1 inch Ginger (अदरक)

1 fresh Green Chilli (हरी मिर्च)

 

Other Ingredients For Rasawala Aloo

2-3 tbsp Oil (तेल)

1 tsp Cumin Seeds  (जीरा)

¼ tsp Fennel Seeds (सौंफ)

Crushed paste (पीसा हुआ पेस्ट)

2 medium Onions – chopped (प्याज़)

1 tsp Turmeric Powder (हल्दी पाउडर)

½ tsp Asafoetida (हींग)

1 tsp Coriander Powder (धनिया पाउडर)

2 medium Tomatoes – chopped (टमाटर)

½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

6 medium Potatoes – diced (आलू)

Salt to taste (नमक स्वादानुसार)

Water as required (पानी)

2 tbsp Coriander leaves – chopped (धनिया पत्ता)

 

Process

For Crushed Paste

  • In a mortal pastel add garlic, ginger, green chillies and crush them coarsely. Keep aside for further use.

 

For Rasawala Aloo

  • In a pan add oil let it heat properly and add cumin seeds, fennel seeds, crushed paste saute them for a minute.
  • Now add onion and cook until translucent. Then add turmeric powder, asafoetida, coriander powder and saute it for 3-4 minutes
  • And then tomatoes and cook it until completely soft and leave oil from the sides then add the degi red chilli powder and mix properly.
  • Now add potatoes, salt mix and saute for a minute, then add water then cover it and cook until completely cooked.
  • Once cooked properly, mash some of the potatoes to make the gravy little thick and at least add the coriander leaves.
