Ragda Patties

Ingredients

For Patties

3 medium Potatoes, boiled & grated , आलू

Salt to taste , नमक स्वादानुसार

1 tsp Garlic-Green chilli paste, लहसुन और हरि मिर्च का पेस्ट

3 White sliced bread, without edges , स्लाइस ब्रेड

Oil for frying , तेल तलने के लिए

 

For Ragda

2 cup White Peas, (cooked with salt & turmeric powder) , सफेद वटाना

Water , पानी

 

Other Ingredients For Ragda Patties

4 tbsp Green chutney , हरी चटनी

4 tbsp Sweet & Sour chutney , खट्टी मीठी चटनी

¼ tsp Degi red chilli powder , देगी लाल मिर्च पाउडर

½ cup Onion, chopped , प्याज

¼ cup Tomato, chopped , टमाटर

1 fresh Green chilli, chopped , हरी मिर्च

½ tsp Dry garlic chutney , सुखी लहसुन चटनी

1 tbsp Coriander leaves, chopped , धनिया पत्ता

2 tbsp Sev , सेव

¼ tsp Roasted cumin powder , भुना जीरा पाउडर

¼ tsp Chaat masala , चाट मसाला

¼ cup Pomegranate pearls , अनार के दाने

Lemon wedges , नींबू की फलियां

 

Process

For Patties

  • In a bowl add grated potatoes, salt, garlic-green chilli paste, white sliced bread and mix everything properly and keep aside for 5-10 minutes.
  • After resting, make some round tikki from the mixture and fry on both sides until golden brown. Remove and keep aside for further use.

 

For Ragda

  • In a pan add water and boiled white peas ( with turmeric powder & salt) and bring it to a boil (don’t add too much water it should be not too thick nor too thin).

 

For Assembling Ragda Patties

  • On a serving plate add warm ragda then add some green chutney, sweet & sour chutney and then place the patties on it.
  • Now sprinkle some degi red chilli powder, chopped onion, tomatoes, green chilli, and some dry garlic chutney.
  • Then garnish it with some coriander leaves, sev, roasted cumin powder, chaat masala, pomegranate pearls and lemon wedges.
  • Serve immediately.
