Pumpkin Bharta

Ingredients

For Pumpkin Roasting

2 Cups Pumpkin, peeled & cubed

Salt to taste

2 tbsp Oil

Crushed Black Pepper

For Gravy

3 tbsp Oil

1 Cup Onion, chopped

1 tbsp Ginger garlic paste

¾ Cup Tomatoes, chopped

1 tbsp Green chilies, chopped

1 tbsp Red chili powder

½ tsp Turmeric powder

2 tsp Garam Masala Powder

1 tsp Coriander Powder

1 cup Water

½ tsp Cumin Powder

1 tbsp Lemon Juice

Process

  • Take cubed pumpkin in a baking tray, coat with salt, oil and black pepper. Bake for 15mins at 180*c.
  • Remove from oven and mash the pumpkin. Keep aside.
  • In a kadai, heat oil. Add onion and cook till translucent. Add ginger garlic paste and saute for few seconds.
  • Add tomatoes and saute till tomatoes are cooked. Add green chilies, red chili powder, turmeric powder, garam masala powder, coriander powder and mix well.
  • Add pumpkin mash and add water to de glaze.
  • Finish with cumin powder and lemon juice. Cook till water is reduced. Serve hot.
