Potato Tornado Chaat

Ingredients

For Frying Potato Tornado

2 medium Potatoes (आलू)

2 Wooden Skewers (वुडन स्किवर)

Water (पानी)

Salt to taste (नमक स्वादानुसार)

Oil for frying (तेल तलने के लिए)

 

For Dry Green Chutney

1 small bunch Coriander Leaves (धनिया के पत्ते)

2-3 fresh Green Chillies (हरी मिर्च)

Salt to taste (नमक स्वादानुसार)

½ cup Roasted Chana Dal (भुने चने की दाल)

1 tsp Dried Mango Powder (आमचूर पाउडर)

½ tsp Cumin Powder (जीरा पाउडर)

 

For Curd

1 cup Curd (दही)

Salt to taste (नमक स्वादानुसार)

2 tsp Powdered Sugar (पिसी हुई चीनी)

 

For Chaat

1 tbsp Tamarind Chutney (इमली की चटनी)

1 tbsp Dry Green Chutney (सूखी हरी चटनी)

A pinch Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

A pinch Roasted Cumin Powder (भुना जीरा पाउडर)

Mint Leaves (पुदीने के पत्ते)

Onion Rings (प्याज़ के छल्ले)

Coriander Leaves (धनिया पत्ता)

Lucknowi Masala (लखनवी मसाला)

Pomegranate Pearls (अनार के दाने)

 

Process

For Frying Potato Tornado

  • Firstly cut the potatoes in tornado shape with the help of a wooden skewer and knife.
  • Then put in the mixture of salt and water for 5-10.
  • Now deep fry them in medium hot oil until half done.
  • Before serving fry it second time in medium high hot oil until golden brown and crispy.
  • Keep aside for further use.

 

For Dry Green Chutney

  • In a grinder jar add coriander leaves, green chillies, tasted chana dal, dried mango powder, cumin powder and grind it into a fine powder. Keep aside for further use.

 

For Curd

  • In a bowl mix curd, salt, powdered sugar and keep aside for further use.

 

For Assembling Chaat

  • In a serving plate spread curd, place the fried potato, add some tamarind chutney, sprinkle some dry green chutney, degi red chilli powder, roasted, cumin powder.
  • Then garnish with mint leaves, coriander leaves, onion rings, lucknowi masala and pomegranate pearls, serve immediately.
