Papdi Chaat

For Papdi Dough

1 cup Maida , मैदा

½ cup Wheat flour , आटा

2 tbsp Gram flour , बेसन

Salt to taste , नमक स्वादानुसार

½ tsp Carom seeds , अजवाइन

1/3 cup Ghee , घी

Cold water as required , ठंडा पानी


For Topping

Prepared Papdi , तैयार पापड़ी

½ cup boiled Potatoes (mixed with chaat masala & red chilli powder) , उबले हुए आलू

1 medium Onion, chopped , प्याज

A few Mint leaves, chopped , पुदीना

A few Coriander leaves, chopped , धनिया पत्ता

1 big Tomato, chopped , टमाटर

¼ cup Brown chana & Green moong, boiled , चना और मूंग

1 cup Curd , दही

¼ cup Sweet & Sour chutney , खट्टी मीठी चटनी

¼ cup Green chutney , हरी चटनी

½ cup Dal mouth mixture or Sev , दालमोठ या सेव

1 tbsp Roasted cumin seeds, crushed , कोटा हुआ भुना जीरा

1 tbsp Chaat masala , चाट मसाला

2 fresh Green chillies , हरी मिर्च


For Green Chutney

1 cup Coriander leaves , धनिया पत्ता

½ cup Mint leaves , पुदीना

1 medium Onion, chopped , प्याज

1 inch Ginger, chopped , अदरक

1 fresh Green chilli , हरी मिर्च

Salt to taste , नमक स्वादानुसार

2-3 ice cubes , बर्फ

1 tbsp Oil , तेल




For Papdi Dough & Frying

  • In a bowl add maida, wheat flour, gram flour, salt, carom seeds, ghee and mix properly until bread crumbs consistency.
  • Now add water little by little and knead medium hard dough. Cover and keep aside at least for 15-20 minutes.
  • After it’s well rested properly, make proper portions of the dough and roll it thin but little thicker than roti.
  • Then cut it in small rounds with any round think and prick it with a fork.
  • Fry them in medium hot oil until golden brown and crispy. Remove on the absorbent paper and keep aside for further use.


For Papdi Chaat

  • In a serving plate place the prepared papdi and place the potatoes mixed with chaat masala & red chilli powder after that add chopped onion mixed with chopped mint leaves & coriander leaves.
  • Now add chopped tomatoes and a mixture of boiled brown chana & moong, add some curd on it and then add both green chutney & sweet and sour chutney.
  • Then sprinkle some dal mouth minutes or sev, a pinch crushed roasted cumin seeds and chaat masala.
  • Serve immediately.


For Green Chutney

  • In a blender jar add all the ingredients and blend it into a proper paste. Store in an air-tight container in the fridge.
