Paneer Ghee Roast

Ingredients

For the Masala

1 tbsp Ghee / घी

1 tsp peppercorns / काली मिर्च

1 tsp cumin seeds / ज़ीरा

1 tsp fennel seeds / सौंफ

1 inch cinnamon / दाल चीनी

½ tsp fenugreek seeds / मैथी दाने

1 tbsp coriander seeds / धनिया

3-4 kashmiri red chillies, seedless / कश्मीरी लाल मिर्च

5-6 garlic cloves / लहसुन

1 inch ginger, sliced / अदरक

¼ cup tamarind pulp / इमली

 

For Ghee Roast

2 tbsp Ghee / घी

3-4 small madras onion, finely sliced / प्याज

2 sprigs curry leaves / कड़ी पत्ता

¼ tsp turmeric / हल्दी

Prepared Masala / तयार मसाला

250 gm Paneer, cut into large cubes / पनीर

1 tbsp jaggery, grated/ sugar / गुड़

Salt to taste / नमक

5-6 Curry Leaves, hand torn / कड़ी पत्ता

 

Process

  • Heat ghee in a frying pan and add all the whole spices and saute for 2 minutes on low flame.
  • Now add kashmiri red chilli, garlic cloves, ginger and saute for another 2-3 minutes.
  • Add this mixture into blender, tamarind puree and blend until smooth paste. Add in little water if required.
  • For ghee roast, add sliced onion, curry leaves. Saute until onions are translucent. Add turmeric, prepared masala, jaggery/suagr and keep stirring. While stirring add 1 cup hot water gradually.
  • Add paneer cubes, adjust salt and mix gently until masala gets coated well with the paneer.
  • Cook for another 4-5 minutes. Garnish with coriander leaves, torn curry leaves.
  • Serve hot with parotta or appams.
