One Pot Quick & Easy Bean Taco Soup

1 teaspoons olive oil
1 small onion, finely chopped
1 red bell pepper, finely chopped
1 cup of black beans/ kidney beans, soaked, cooked
½ cup French beans, cut into cubes
1 cup tomato puree
1 cup sweet corn
1 tbsp of taco seasoning
2 cups of vegetable broth
Salt and pepper to taste
Fresh coriander leaves
Your choice of taco toppings (tortilla chips, sour cream, cheese, avocado, olives, etc.)
Process
- Heat the oil in a large pot over medium heat. Add the onions and bell pepper, season it with salt and pepper, cook for 5 minutes.
- Add the black beans, tomato puree, corn, chicken and taco seasoning. Stir to combine. Add the chicken broth and bring to a simmer. Cook for 15 minutes. Taste and add additional salt and pepper if needed.
- Serve the soup immediately with your choice of taco topping
