One Pot quick & Easy Bean Taco Soup

  • 1 teaspoons olive oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 cup of black beans/ kidney beans, soaked, cooked
  • ½ cup French beans, cut into cubes
  • 1 cup tomato puree
  • 1 cup sweet corn
  • 1 tbsp of taco seasoning
  • 2 cups of vegetable broth
  • salt and pepper to taste
  • fresh coriander leaves
  • Your choice of taco toppings (tortilla chips, sour cream, cheese, avocado, olives, etc.)


  • Heat the oil in a large pot over medium. Add the onion and pepper, season with salt and pepper and cook for 5 minutes.
  • Add the black beans, tomato puree, corn, chicken and taco seasoning. Stir to combine. Add the chicken broth and bring to a simmer. Cook for 15 minutes. Taste and add additional salt and pepper if needed.
  • Serve the soup immediately with your choice of taco topping
