Khatta Dhokla

Ingredients

For Fermentation

1 cup Kolum Rice – soaked (कोलम चावल)

½ cup Split Black Gram – soaked (उड़द दाल)

½ cup Sour Curd (खट्टा दही)

 

Other Ingredients

¼ cup Coconut water (नारियल का पानी)

Salt to taste (नमक स्वादानुसार)

½ tsp fresh Green Chilli Paste (हरी मिर्च का पेस्ट)

1½ tbsp Oil (तेल)

½ tsp Fruit Salt (फ्रुट साॅल्ट या मीठा सोडा)

Oil for greasing (तेल गि्सिंग के लिए)

 

For Tempering

2 tbsp Oil (तेल)

1 tsp Mustard Seeds (सरसों के बीज)

2-3 Dry Red Chillies (सूखी लाल मिर्च)

1 sprig Curry Leaves (कड़ी पत्ता)

 

Process

For Fermentation

  • In a grinder jar add soaked rice, split black gram, sour curd and grind it into a proper paste.
  • Remove in a bowl and keep in a warm place to ferment for 4-5 hours.
  • After fermented, add coconut water, salt, green chilli paste, mix it properly.
  • Now take one portion of the batter and add mixture of oil, fruit salt in itvand mix it properly with light hands.
  • Switch on the steamer, and also grease the mould or the plate then pour the batter in it and steam it for 10-12 minutes on high heat.
  • Once steamed remove and let it cool a little, then cut in the desired shape and pour the hot tempering on it and serve warm.

 

For Tempering

  • In a small pan heat oil and add mustard seeds, dry red chillies, curry leaves, saute for a minute and it ready to use.
