Kerala Sambhar

Prep: 10 minutes + soaking | Cook: 30 minutes | Servings: 4

Ingredients

For Sambhar Masala

1 tbsp Coconut Oil/ नारियल का तेल

A pinch of Asafoetida/ हींग

1 tbsp Coriander seeds/ धनिया के बीज

1 tsp Split Bengal Gram/Chana dal, soaked/ चना दाल

½ tsp Fenugreek seeds/ मेथी के बीज

3 Dry Red Chillies/ सुखी लाल मिर्च

½ cup Fresh Coconut, grated/ ताज़ा नारियल

 

For Sambhar

1 cup Tamarind water/ इमली का पानी

1 tsp Turmeric Powder/ हल्दी पाउडर

1 Drumsticks, cut into 1 inch-piece/ सिंघी

4-5 Small Eggplants, cut into quarters/ बैंगन

3-4 Okra, cut into half/ भिंडी

½ cup Vellarikka/Cucumber, cut into cubes/ ककड़ी

1 cup Pigeon Pea/Toor dal, soaked and cooked/ टूअर दाल

Salt to taste/ नमक स्वाद अनुसार

Sambhar masala/ सांभर मसाला

Coriander leaves for garnishing/ धनिया

 Tempering for Sambhar

1 tbsp Coconut Oil/ नारियल का तेल

1 tsp Mustard Seeds/ राइ

Green Beans Toran

2 tsp Coconut Oil, coarsely grounded/ नारियल का तेल

2 Green Chillies, coarsely grounded/ हरी मिर्च

1 tsp Cumin Seeds, coarsely grounded/ ज़ीरा

1 tbsp Coconut Oil/ नारियल का तेल

1 tsp Mustard Seeds/राइ

1 cup Green Beans, chopped/ हरी फली

1 tsp Turmeric Powder/ हल्दी पाउडर

Salt to taste/ नमक स्वाद अनुसार

A sprig of Curry Leaves/ कढ़ी पत्ता

Process

Sambhar Masala

  • In a grinder, add coconut oil, asafoetida, coriander seeds, chana dal, fenugreek seeds, red chillies, water and grated coconut, grind into a smooth paste.

For Sambar

  • In a heavy bottom pan, add tamarind water and turmeric, mix well.
  • Then add drumsticks, eggplants, okra and vellarika, mix well and cook.
  • Now add toor dal and salt, mix well, cover and cook for 4-5 minutes.
  • Add the prepared sambhar masala and water, mix well.
  • Garnish it with coriander leaves.
  • In another pan, add coconut oil and mustard seeds, let them splutter. Pour the tempering on sambhar.
  • Serve hot with rice.

Green Beans Toran

  • In a mortar pastel, add green chillies, cumin seeds and coconut oil, coarsely grind them. Keep aside till further use.
  • In a pan, add coconut oil and mustard seeds, let it splutter.
  • Add French beans, turmeric powder, salt and water to avoid it from sticking, mix well.
  • Then add green chilli paste and curry leaves, cook well.
  • Add salt and curry leaves, cook through.
  • Serve hot with sambhar and rice.
