Jain Manchow Soup

Prep: 15 minutes | Cook: 20 minutes | Servings: 2

Ingredients

For Soup

½ tbsp Sesame Oil

1 tbsp ginger, finely chopped (optional)

1 tsp green chillies, chopped

1 cup mixed vegetables, finely chopped (cabbage, green beans, cauliflower, red bell pepper, capsicum)

2 cups Vegetable stock

½ tbsp Fresh mint leaves, finely chopped

1 tbsp Fresh coriander leaves, chopped

1 tbsp Light Soy sauce

1 tsp vinegar

Salt to taste

black Pepper powder to taste

1 tbsp Cornflour slurry

¼ cup water

For Garnish

½ tbsp Chilli oil

½ tbsp Coriander, finely chopped

Fried Noodles

 Process

  • Heat oil in a deep-bottomed pan, add ginger, green chillies and saute till fragrant.
  • Add vegetables and stir fry for 2-3 minutes.
  • Add the stock, mint, coriander, soya sauce, salt and pepper.
  • Mix corn flour and water in a bowl, make sure there are no lumps.
  • Add the prepared corn flour slurry to the pan, mix well and simmer for 2 minutes.
  • Garnish with chilli oil and coriander.
  • Serve hot with fried noodles.
