Italian Vegetable Soup

Ingredients

For soup:

2 tbsp Olive oil

2-3 Garlic Cloves, finely chopped

1 Large Onion, finely chopped

½ Carrot, diced

4-5 Baby Corns, diced

½ Zucchini, diced

½ cup Tomatoes, blanched and chopped

1 tsp Oregano

Salt to taste

Freshly Crushed Black Pepper Powder

½ cup Macaroni

Parmesan Cheese, grated

Few Basil leaves, hand torn

For Garnish

Olive oil

Parmesan Cheese

Basil Sprig

Process

  • Heat olive oil in a heavy bottom pan. Add garlic, cook till raw smell goes off.
  • Add onions, saute till translucent. Add all the vegetables and cook for 3-4 minutes.
  • Add 8-9 cups water and let it come to a boil.
  • Add oregano, salt and black pepper, mix well.
  • Add Macaroni and cook for 7-8 minutes.
  • Add parmesan cheese and hand torn basil leaves.
  • Serve in a soup bowl. Drizzle olive oil on top.
  • Sprinkle parmesan cheese.
  • Garnish with basil sprig.
