Instant Rajma Pulav

Ingredients

1 tbsp ghee/ घी

¼ tsp cumin seeds/ जीरा

1 bay leaf/ tej patta/ तेज पत्ता

2 green cardamom/ हरी इलायची

4-5 black peppercorn/ काली मिरि

½ inches cinnamon/ दालचीनी

1 medium onion, sliced/ प्याज कटा हुआ

1 tbsp ginger garlic paste/ अदरक लहसुन का पेस्ट

¼ tsp turmeric/ हल्दी

1 tsp Kashmiri red chili powder/ कश्मीरी लाल मिर्च पाउडर

1 tsp coriander powder/ धनिया पाउडर

½ tsp garam masala/ गरम मसाला

1 ½ cups rajma, soaked, cooked/ राजमा

1 cups basmati rice, soaked/ बसमती चावल

2 ½ cups water/ पानी

Salt to taste/ नमक स्वादअनुसार

2 tbsp mint leaves, chopped/ पुदीना के पत्ते

2 tbsp fried onion/ बरिस्ता

Process

  • Heat ghee in an pressure cooker. Splutter all the whole spices.
  • Add in onion and ginger garlic paste; sauté until raw aroma goes away.
  • Add in all the ground spices followed by rajma and cook for another 2 minutes.
  • Add in basmati rice and stir gently. Add in water and adjust salt.
  • Close the lid and give 2 whistles.
  • When pressure come down on its own, open the lid and gently fluff the rajma pulav.
  • Garnish with mint leaves and fried onion.
