Ingredients

For Thandai Mixture

1 tbsp Fennel seeds, सौंफ

1 tbsp Black peppercorns, काली मिर्च के दाने

20-22 no. Green cardamom, हरी इलायची

1 tbsp Poppy seeds, खसखस

1 tbsp Fennel seeds, सौंफ

3 tbsp Sugar, चीनी

A pinch of salt, नमक

1 ½ tbsp Melon seeds, मगज के बीज

100 gms Tata Sampann Almonds, बादाम

100 gms Tata Sampann Cashew Nuts, काजू

½ tsp Saffron strands, केसर

 

For Thandai

½ liter Milk,  दूध

100 ml Water, पानी

¼ tsp Saffron strands, केसर

3 heaped tbsp Thandai Mixture, ठंडाई का मिश्रण

 

For Garnish

fresh Rose petals, गुलाब की पंखुड़ियाँ

Almonds, sliver,  बादाम

fresh Mint sprig, पुदीना पत्ता

 

For Gujiya

Preparation time 15 minutes

Cooking time 25-30 minutes

Serve 4-8

 

For Gujiya Dough

2 cup Refined flour, मैदा

¼ cup Semolina, सूजी

A pinch of salt, नमक

½ tsp Cardamom powder, इलाइची पाउडर

1 tsp Ghee, घी

Water as required, पानी

 

For Filling

½ tbsp Ghee,  घी

⅓ cup Semolina, सूजी

250 gms Mawa, मावा

5 heaped tbsp Thandai Mixture, ठंडाई का मिश्रण

1 heaped tbsp Sugar, चीनी

12-15 no. Raisins, chopped, किशमिश

 

Other Ingredients

Oil for frying, तेल तलने के लिए

 

For Garnish

fresh Rose petals, गुलाब की पंखुड़ियाँ

Almonds, sliver, बादाम

Thandai Mixture, ठंडाई का मिश्रण

Process

For Thandai Mixture

  • In a bowl, add fennel seeds, black peppercorns, green cardamom, poppy seeds, fennel seeds, sugar, a pinch of salt, melon seeds, Tata Sampann almonds, Tata Sampann cashew and saffron strands.
  • Transfer it to a mixture grinder jar and grind it coarsely.
  • Keep it aside for further use.

 

For Thandai

  • In a pot, add milk, water, saffron strands and get a quick boil.
  • Add thandai mixture and give it a good boil.
  • Transfer it to a bowl and keep it aside to cool down at room temperature.
  • Transfer it to a serving glass, garnish it with rose petals, almond slivers and mint sprigs.
  • Serve chilled with gujiyas.

 

For Gujiya Dough

  • In a parat, add refined flour, semolina, a pinch of salt, cardamom powder, ghee, water and knead a tight dough.
  • Roll out the dough and cut out the roundels with the help of a steel bowl or a cutter.
  • Add the prepared filling, close the edges and pinch in with the help of your thumb or give it any desired shape.
  • In a kadai, add oil, once it’s medium hot, add gujiyas and fry it on low flames until golden in color.
  • Transfer it to a serving dish and garnish it with rose petals.
  • Serve hot with thandai.

 

For Filling

  • In a pan, add ghee, once it’s hot, add semolina and saute it for a minute.
  • Add mawa and cook it until golden in color.
  • Add thandai powder and mix it well.
  • Transfer it to a tray and keep it aside to cool at room temperature.
  • Add sugar, raisins and mix it well.
