Gobi Manchurian

35-40 minutes

Ingredients

1 medium Cauliflower – cut in florets (फूल गोभी)

Salt to taste (नमक स्वादानुसार)

2 tbsp Corn-starch (कॉर्न स्टार्च)

 

For Batter

1 tsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)

Salt to taste (नमक स्वादानुसार)

¼ cup Refined Flour (मैदा)

¼ cup Corn-starch / Arrowroot (कॉर्न स्टार्च या अरारोट)

½ tsp Black Pepper Powder (काली मिर्च का पाउडर)

½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

Water (पानी)

 

For Sauce

2 tbsp Oil (तेल)

1 inch Ginger – chopped (अदरक)

2-3 cloves Garlic – chopped (लहसुन)

1 medium Onion – diced (प्याज़)

1 medium Capsicum – diced (शिमला मिर्च)

1 fresh Green Chilli – chopped (हरी मिर्च)

1 stalk Celery – chopped (सेलरी)

1 tbsp Soya Sauce (सोया सॉस)

2 heaped tbsp Tomato Ketchup (टोमेटो केचप)

Water (पानी)

2 tbsp Coriander Leaves – chopped (धनिया के पत्ते)

1 tbsp Spring Onion – chopped (प्याज़ पत्ता)

¼ cup Corn-starch slurry (कॉर्न स्टार्च का लिजाम)

 

For Garnish

Fresh Spring Onion (प्याज़ पत्ता)

 

Process

For Fried Cauliflower

  • In a bowl add cauliflower, salt, corn-starch and mix it properly.
  • Meanwhile heat oil for frying in a kadai.
  • Then add these coated cauliflower in the prepared batter and deep fry in medium hot oil until golden brown and crispy.
  • Remove on an absorbent paper and keep aside for further use.

 

For Batter

  • In a bowl add ginger-garlic paste, salt, refined flour, corn-starch or arrowroot, black pepper powder, degi red chilli powder, water and mix to make flowy thick batter.

 

For Sauce

  • In a wok or kadai heat oil and add ginger, garlic saute for a minute.
  • Now add onion, capsicum, green chillies, celery and saute for 2 minutes.
  • Then add soya sauce, tomato ketchup, water, coriander leaves, spring onion saute once and add corn-starch slurry mix and cook for semi thick sauce.
  • Now add the fried cauliflower in it and mix it once and serve hot or add the sauce in the serving plate and place the fried cauliflower on it and garnish with spring onion.
