Ghevar

Ingredients

½ cup Ghee, घी

8-10 Ice cubes , बर्फ

2 cups Refined flour, मैदा

1 cup Milk, chilled  दूध

2 cups Water, chilled, ठंडा पानी

1 tbsp Lemon juice, नींबू का रस

 

Ghee for frying, घी  तलने के लिए

 

Sugar syrup, चाशनी

 

For Garnish

Condensed Milk, कन्डेंस्ड मिल्क

Dragon fruit, cut into small cubes, ड्रैगन फल

Pear, cut into small cubes, नाशपाती

Plump, cut into small cubes, आलू बुखारा

Whipped cream

Mint leaves, पुदीने के पत्ते

Silver vark, चांदी का वर्ख

Almonds, sliver, बादाम

Pistachios, sliver, पिसता

fresh Rose, गुलाब

 

 

Process

  • In a large mixing bowl, add ghee, ice cubes and rub till the ghee becomes white.
  • Now, add refined flour and mix well.
  • Further, add chilled milk and give a rough mix.
  • Additionally, add chilled water, lemon juice and make a smooth flowing consistency batter.
  • Heat ghee in a thick heavy bottom pan.
  • Pour the batter keeping a good distance from hot ghee.
  • The batter will splatter and later the froth subsides. repeat 10-15 times
  • Pull the ghevar out once cooked, and drain off the ghee completely.
  • Pour the sugar syrup over ghevar, garnish with chopped nuts, condensed milk.
  • Fresh fruits,whipped cream, mint leaves, silver vrak, fresh rose and ready to serve.
