Egg Biryani

Ingredients

For Cooking Rice

1 tbsp Ghee घी

2 inches Cinnamon stick , दालचीनी

2 Bay leaves , तेजपत्ता

1 Star anise , चकरी फूल

5-6 Black peppercorns , काली मिर्च के दाने

1 ½ cup Kolum rice, soaked , कोलम चावल

Water , पानी

Salt to taste , नमक स्वादानुसार

 

For Gravy

2 tbsp Ghee  , घी

1 tbsp Oil , तेल

1 Bay leaf ,  तेजपत्ता

1 Star anise  , चकरी फूल

1 inch Cinnamon stick , दालचीनी

1 inch Ginger, chopped , अदरक

3-4 cloves Garlic, chopped  , लहसुन

3 fresh Green chillies, cut in half  , हरी मिर्च

5-6 Curry leaves  , कड़ी पत्ता

3 medium Onion, sliced  , प्याज

2 medium Tomato, chopped  , टमाटर

1 tbsp Coriander powder , धनिया पाउडर

1 tsp Degi red chilli powder , देगी लाल मिर्च पाउडर

½ tsp Black pepper powder,  काली मिर्च का पाउडर

2 heaped tbsp Sour Curd , खट्टा दही

Salt to taste , नमक स्वादानुसार

6 Eggs, hard boiled , अंडे

Water , पानी

Handful of Mint & Coriander leaves , पुदीना धनिया के पत्ते

 

Other Ingredients

¼ cup Saffron milk , केसर वाला दूध

2 heaped tbsp Fried onion , बरिस्ता

2 fresh Green chillies, slit in half ,  हरी मिर्च

A few Mint leaves , पुदीने के पत्ते

 

For Garnish

Fried Cashew nuts , तला हुआ काजू

Fried Raisins , तली हुई किशमिश

Raita , रायता

 

Process

For Cooking Rice

  • In a kadai heat ghee and add cinnamon sticks, star anise, black pepper cons, bay leaves saute them for a minute.
  • Now add the kolum rice and saute it properly with light hands for 1-2 minutes on medium heat.
  • Then add water, salt and let it cook on medium heat until 80% cooked.
  • Once done, remove and keep aside for further use.

 

For Gravy

  • In a kadai heat ghee & oil and add bay leaf, star anise, cinnamon sticks, ginger, garlic, green chillies, curry leaves, onion and saute until light golden brown on medium high heat.
  • Now add the tomatoes and cook until soft on medium heat.
  • Then add degi red chilli powder, coriander leaves, black pepper powder and saute them until fragrant.
  • Add the sour curd, salt and saute until the ghee starts coming from sides.
  • Put the hard boiled eggs in and some water mix it properly and cook for 2 minutes.
  • Now finish it with some handful of mint & coriander leaves mix and keep aside for further use.

 

For Assembling Egg Biryani

  • In a kadai or pot or cooker add a layer of cooked rice then place the boiled eggs one by one and pour over the gravy, then add another layer of cooked rice and finish it with saffron milk, fried onion, green chillies, some mint leaves.
  • Now cover and let it dum on low heat for 5-10 minutes.
  • Then switch off the flames and serve hot in a serving plate with raita and garnish with fried cashew nuts, fried raisins.
