Dhaba Style Chicken

40-45 minutes

Ingredients

For Chicken Masala

5-6 no Black cardamom,  बड़ी इलायची

12-15 Green cardamom , हरी इलायची

2 tbsp Coriander seeds, धनिया की बीज

1 no Mace, जावित्री

1 tsp Black Pepper corn,  काली मिर्च के दाने

1 tsp Cumin seeds, जीरा

2-3 Cloves, लॉन्ग

¼ tsp Salt,  नमक स्वादानुसार

 

For Marinating Chicken

750 gm Chicken (with bone) cut in big pieces , चिकन

1 ½ inch Ginger, अदरक

5 no Garlic clove, लहसुन

2-3 Green chillies, हरी मिर्च

1 tbsp Oil, तेल

½ tsp Salt,  नमक स्वादानुसार

 

For Tempering

1 tbsp Oil, तेल

1 tsp Cumin,  जीरा

1 no Black cardamom, बड़ी इलायची

4-5 no medium Onion, chopped , प्याज

1 tsp Turmeric powder, हल्दी पाउडर

1 tbsp Degi red chilli powder,  देगी लाल मिर्च पाउडर

1 tsp Coriander powder, धनिया पाउडर

Marinated chicken , मैरिनेटेड चिकन

3 no fresh Tomato puree , ताज़े टमाटर की प्यूरी

Water as required, पानी

2 tbsp Prepared chicken masala,  तैयार किया हुआ मसाला

 

For Mirchi Roti

2 Balls Whole wheat dough

1 tsp Chilli flakes

1 tbsp Oil,  तेल

1 tbsp Mint leaves, chopped, पुदीने के पत्ते

 

For Garnish

Fresh Coriander sprig, धनिया पत्ता

 

Process

For Chicken Masala

  • In a pan, add black cardamom, green cardamom, coriander seeds, mace, black peppercorns, cumin seeds, cloves and salt dry roast on low flame until the spices turn aromatic.
  • Transfer it into a grinder jar and grind into a fine powder. Keep it aside for further use.

 

For Marinating Chicken

  • In a motarpestel, add ginger, garlic, green chilli, salt, oil and make a smooth paste out of it.
  • In a bowl, add chicken and prepared ginger garlic paste marinated well. Keep it for 10-15 minutes.

 

For Tempering

  • Heat oil in a heavy bottom pot, add cumin seeds, black cardamom and saute well.
  • Add onion and saute for 5 minutes until translucent.
  • Add turmeric powder, degi red chilli powder, coriander powder and saute for 2-4 minutes.
  • Add marinated chicken and mix everything well.
  • Add tomato puree, water as required and cook for atls 15-20 minutes on medium flamme.
  • Add prepared chicken masala and mix well.
  • Garnish it with coriander sprig and serve hot with mirch roti.

 

For Mirchi Roti

  • Take a lemon size ball dough and dust with wheat flour.
  • Roll gently to medium thickness.
  • sprinkle little chilli flakes and spread uniformly making sure well combined.
  • Fold it into envelope shape and start rolling.
  • On the other side spread fresh mint leaves and press it gently.
  • Now on a hot tawa place the rolled roti and cook for a minute.
  • flip again once or twice till both the sides are cooked properly.
