Ingredients

¼ cup Oil, तेल

3 large Onion, roughly sliced, प्याज

Salt to taste, नमक स्वादअनुसार

2 medium size Tomato, chopped, टमाटर

 

For Chicken Marination

1 cup Curd, beaten, दही

½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

1 Bay leaf, तेजपत्ता

2-3 Cloves, लॉन्ग

2 Green cardamom, हरी इलायची

1 Black cardamom, बड़ी इलायची

4-5 Black peppercorns, काली मिर्च के दाने

1 Mace, जावित्री

¼ inch Cinnamon stick, दालचीनी

2 heaped tbsp Degi red chili powder, देगी लाल मिर्च पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

A pinch of asafoetida, हींग

1 tsp Coriander powder, धनिया पाउडर

¼ tsp Cumin powder, जीरा पाउडर

Prepared Onion Mixture, तैयार किया हुआ प्याज का मिश्रण

8-9 Chicken, drumstick, चिकन टंगड़ी

10-12 Almonds, roughly chopped, बादाम

 

For Tempering

Marinated chicken, मैरिनेटेड चिकन

 

For Smoke

Coal, कोयला

2-3 Cloves, लॉन्ग

2 tsp Marinated Chicken Oil, मैरिनेटेड चिकन का तेल

 

For Garnish

½ tsp Dry fenugreek leaves, crushed, कसूरी मेथी

Coriander sprig, धनिया पत्ता

Process

  • In a sauce pot, add oil. Once it gets hot, add onions and saute well.
  • Once it turns light brown in color, add salt to taste saute well.
  • Add tomatoes and cook on medium flame. Once it’s cooked well, keep it aside for further use.

For Chicken Marination

  • In a large bowl, add curd, ginger garlic paste, bay leaf, cloves, green cardamom, black cardamom.
  • Add black peppercorns, mace, cinnamon stick, degi red chili powder, turmeric powder, a pinch of asafoetida.
  • Add coriander powder, cumin powder, and prepared onion tomato mixture.
  • Now, add chicken drumstick, salt to taste, almonds and marinate well. Rest it for 10-15 minutes.

 

For Tempering

  • In a saucepot, add the marinated chicken mixture.
  • Cover it with the lid and cook for 5-10 minutes on low flame.
  • Now, heat up a piece of charcoal directly on the gas stove.
  • Once the charcoal is hot enough, place it in the steel bowl along with cloves. Now, add rogan from chicken angara and place the steel bowl in chicken angara.
  • Cover the lid and let it cook for 15-20 minutes.
  • Once the chicken is cooked well, transfer it into a serving dish, garnish it with coriander sprig.
  • Serve hot with roti or rice.
