Bajra Masala Pulav

Prep: 10 minutes | Cook: 30 minutes | Servings: 4

Ingredients

2 tbsp Oil

1 tsp Cumin seeds

1 cup Bajra, washed and soaked overnight

2 ½ cups Water

Salt to taste

1 tsp Turmeric powder

For the tadka

2 tbsp Ghee/ Oil

½ tsp Cumin seeds

2 Green chillies, chopped

1 tsp Ginger, chopped

1 tsp Garlic, chopped

1 Onion, chopped

½ cup Carrot, cut into dices

½ cup Green peas, blanched

½ cup Green Beans, cut into roundels

1 tsp Turmeric powder

1 tsp Red chilli powder

1 tsp Garam masala powder

Salt to taste

Coriander leaves, chopped for garnish

Method:

  • Heat oil in a pressure cooker. Add in cumin seeds and let them crackle.
  • Later add in bajra and sauté it for a couple of minutes.
  • Now pour in water. Also add in turmeric powder and salt. Give it a nice stir.
  • Let this cook for 4-5 whistles.

For the tadka

  • Heat ghee in a pan. Add in cumin seeds and let them crackle.
  • Now add in green chillies, ginger and garlic and sauté for a minutes time.
  • Add in onion and cook for 2-3 minutes until it turns slight translucent.
  • Now add it carrot and green beans and mix well. Cook for few minutes and then add in green peas.
  • Toss everything well.
  • Add in turmeric powder, red chilli powder, garam masala and salt. Mix everything well.
  • Once all the vegetables have cooked turn off the flame.
  • Add this tadka to bajra and mix well.
  • Cook for more 2-3 minutes and turn off the flame.
  • Garnish with coriander leaves and serve hot.
