Anda Aur Keema Roll

Ingredients

For Marinating Mutton Mince

500 gm Mutton Mince (मटन का खिमा)

1 cup Curd (दही)

1 tsp Ginger-Garlic Paste (अदरक लहसुन का पेस्ट)

½ tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

¼ tsp Turmeric Powder (हल्दी पाउडर)

½ tsp Coriander Powder (धनिया पाउडर)

 

For Mutton Keema

2 tbsp Oil (तेल)

1 heaped tbsp Ghee (घी)

1 tsp Cumin Seeds (जीरा)

1 Black Cardamom (बड़ी इलायची)

1 fresh Green Chilli – chopped (हरी मिर्च)

1 inch Ginger – chopped (अदरक)

2 medium Onion – chopped (प्याज़)

Marinated Mutton Mince (मैरिनेटेड मटन का खिमा)

few Coriander Leaves – roughly torn (धनिया पत्ता)

few Mint Leaves – roughly torn (पुदीने के पत्ते)

½ Lemon juice (नींबू को रेस)

 

For Roti

½ cup Refined Flour Dough (मैदे का गुंदा हुआ आटा)

1 ½ tbsp Ghee (घी)

 

Other Ingredients

1 Egg (अंडा)

Salt to taste (नमक स्वादानुसार)

a pinch Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

1 tsp Ghee (घी)

Salted Onion – chopped (नमक वाले प्याज़)

1 hard Boiled Egg – grated (उबला हुआ अंडा)

1 tsp Mint Chutney (पुदीने की चटनी)

fresh Coriander Leaves (धनिया पत्ता)

 

 

For Garnish

Mint Chutney (पुदीने की चटनी)

Tomato Wedges (टमाटर की वेजेस)

Lemon Wedges (नींबू की वेजेस)

fresh Coriander Leaves (धनिया पत्ता)

a pinch Degi Red Chilli Powder (देगी लाल मिर्च पाउडर)

 

Process

 

  • Mix all the ingredients for marination and keep aside for an hour
  • To cook the mince add spices to hot ghee , add chopped vegetables and sweat , add marinated mince and cook for 30 minutes , add herbs and cook for another 10
  • Make a paratha and put on top of a broken egg till it sticks and is cooked
  • Take off flame , put on a board , add chutney , mince and topp with chopped onion (optional ) and grated egg
  • Serve with a salad of your choice
