Aloo Tikki Roll

Ingredients

For Spread / Chutney

1 inch Ginger, chopped , अदरक

¼ cup Mint leaves, पुदीने के पत्ते

½ cup Coriander leaves , धनिए के पत्ते

2 tbsp Oil, तेल

2 cloves Garlic , लहसुन

2 fresh Green chillies , हरी मिर्च

Salt to taste , नमक स्वादानुसार

1 cup Mayonnaise , म्योनीज (½ cup before blending & ½ cup after blending)

 

For Stuffing

2 tbsp Oil , तेल

½ tsp Fennel seeds , सौंफ

1 inch Ginger, chopped , अदरक

2 fresh Green chillies, chopped , हरी मिर्च

4 medium Potatoes, boiled & grated , आलू

Salt to taste , नमक स्वादानुसार

½ tsp Black pepper powder , काली मिर्च पाउडर

2 tbsp Coriander leaves, chopped,  धनिया के पत्ते

1 heaped tbsp Bread crumbs, ब्रेड क्रम

Bread crumbs for Coating, ब्रेड क्रम कोटिंग के लिए

Oil for frying तेल तलने के लिए

 

For Masala

2 tbsp Coriander seeds, धनिए के बीज

2 tbsp Cumin seeds, जीरा

2 tbsp Fennel seeds, सौंफ

1 tsp Salt, नमक

 

For Roti

½ cup Refined flour and Wheat flour dough मैदे और गेहूं का‌ गुंदा हुआ आटा

1 tbsp Butter , मक्खन

 

For Salad

3 medium Tomato, julienned , टमाटर

1 medium Capsicum, julienned , शिमला मिर्च

1 large onion, sliced

Salt to taste , नमक स्वादानुसार

¼ tsp Black pepper powder , काली मिर्च पाउडर

1 tsp Oil , तेल

½ small Lemon juice , नींबू का रस

 

Other Ingredients

1 tbsp Butter , मक्खन

 

Process

For Spread / Chutney

  • In a blender jar add ginger, mint leaves, coriander leaves, oil, garlic, green chillies, salt, ½ cup mayonnaise and blend it in a smooth paste.
  • Remove in a bowl and mix in the remaining ½ cup mayonnaise, and keep aside for further use.

 

For Stuffing

  • In a pan heat oil and add fennel seeds, let them crackle.
  • Now add ginger, green chillies and sauté for a minute.
  • Then add the grated potatoes, salt, black pepper powder, coriander leaves mix everything properly and remove in a bowl to cool down a little.
  • Now add bread crumb to the mixture and mix it properly.
  • Take some portion from the mixture and shape it like a tikki, repeat this process for all others.
  • Now roll them in the bread crumbs and keep aside.
  • Heat oil in a pan and fry this tikki’s in hot oil on medium heat until golden brown and crispy for both sides. Remove and keep aside for further use.

 

For Masala

  • In a pan add coriander seeds, cumin seeds, fennel seeds, salt and dry roast them lightly until fragrant.
  • Remove and let it cool down a little, then put in a motor pastel and crush it coarsely. And keep aside for further use.

 

For Roti

  • Take a small portion of the dough and roll it thin using a rolling pin.
  • Heat flat pan and roast it on both sides, apply some butter and cook until light brown from both sides. Keep aside for further use.

 

For Salad

  • In a bowl add tomatoes, capsicum, onion, salt, black pepper powder, oil, lemon juice and mix everything properly, keep aside for further use.

 

For Assembling Aloo Tikki Roll

  • Place the roti on a medium hot pan, apply some butter on both sides.
  • Now apply the prepared spread on one side and then add some salad, then the cooked tikki’s and remove from the pan on a plate.
  • Now roll it tightly and serve with some prepared chutney.
