Ingredients

For Green Chilli Garlic Paste

2-3 Green chillies, हरी मिर्च

5-6 Garlic cloves, लहसुन

Salt to taste, नमक स्वादअनुसार

 

For Batata Vada

1 tbsp Oil, तेल

1 tsp small Mustard seeds, बारीक राई

1 sprig Curry leaves, करी पत्ते

Green Chilli Garlic paste

1 tsp Turmeric powder, हल्दी पाउडर

¼ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

Little water, पानी

4-5 Potatoes, boiled & mashed,आलू

Salt to taste, नमक स्वादअनुसार

2 tbsp Coriander leaves, chopped, धनिया पत्ता

Oil for frying, तेल तलने के लिए

 

For Batter

2 cups Gram flour, बेसन

Salt to taste, नमक स्वादअनुसार

¼ tsp Baking soda, बेकिंग सोडा

A pinch of degi red chilli powder, देगी लाल मिर्च पाउडर

Water, पानी

¼ tsp Sugar, चीनी

2 tsp Oil, तेल

 

For Garlic Chutney

½ cup fresh Coconut, grated, ताजा नारियल

5-6 Garlic cloves, with skin, लहसुन

5-6 Dry red chillies, सूखी लाल मिर्च

A pinch of asafoetida, हींग

 

For Fried Chilli

5-6 Green Chillies,Slit, हरी मिर्च

Oil for frying, तेल तलने के लिए

Salt to taste, नमक स्वादअनुसार

 

For Chura Pav

Ladi pav, लादी पाव

Green chutney, हरी चटनी

Besan ka chura, तले बेसन का चुरा

Dry garlic chutney, सुखी लहसुन की चटनी

 

For Classic Vada Pav

Ladi pav, लादी पाव

Green chutney, हरी चटनी

Dry garlic chutney, सुखी लहसुन की चटनी

Batata vada, बटाटा वडा

For Cheese Vada Pav

For Schezwan Vada Pav

For Burger Vada Pav

Process

For Green Chilli Garlic Paste

  • In a mortar pestle, add green chilli, garlic cloves, salt to taste and make a smooth paste.

For Batata Vada

  • Heat oil in a deep pan, add mustard seeds and let it splutter well.
  • Add curry leaves, green chilli and garlic paste and saute it well.
  • On medium flame, add turmeric powder, Degi red chilli powder and saute for a minute.
  • Add a little​​ ​​water and saute it well. Switch off the flame, add boiled potatoes and mix everything well.
  • Add coriander leaves and mix it well. Keep it aside to cool.
  • Now, make a medium size ball of potato mixture and keep it aside for further use.
  • Heat oil in a kadai, on medium flame.
  • Now, dip the batata vada into the besan batter till they are well coated, gently slide it into hot oil and fry them until golden brown.
  • Remove on absorbent paper and keep it aside for further use.
  • Serve hot.

 

For Making Chura

  • Drizzle the batter into the hot oil and deep fry on medium flame until golden in color and crisp.
  • Remove in an absorbent paper and keep it aside for further use.

 

For Batter

  • In a bowl, add gram flour, salt to taste, baking soda, degi red chilli powder, water as required.
  • Sugar and mix everything well. Rest for 10 minutes.
  • Now, add oil and mix it well to a smooth batter of coating consistency.

 

For Garlic Chutney

  • In a non-stick pan, add fresh coconut and roast it on low flame until light golden in color.
  • Add garlic cloves with skin and dry roast it well. Add dry red chillies and roast it well.
  • Add asafoetida and mix well. Transfer it into a bowl and let it cool down.
  • Once it completely cools down, transfer it into a grinder jar and grind it corasley.
  • Keep it aside for further use.

 

For Fried Chilli

  • In the same hot oil fry the chillies remove non absorbent paper.
  • Sprinkle some salt and mix it well. Keep it aside for further use.

For Chura Pav

  • Take a pav, slice into half, apply some green chutney on both the sides of the pav.
  • Add a handful of fried chura with dry garlic chutney and serve hot.

 

For Classic Vada Pav

  • Take a pav, slice into half, apply some green chutney on both the sides of the pav.
  • Sprinkle some dry garlic chutney, place the fried batata vada in the center with fried green chilli.
  • Serve hot.

 

For Cheese Vada Pav

  • Take a pav, slice into half, apply some green chutney, mayonnaise on both the sides of the pav.
  • Place batata vada in the center, grate the cheese on top of it along with mayonnaise.
  • Serve hot with fried green chilli.

 

For Schezwan Vada Pav

  • Take a pav, slice into half, apply schezwan chutney on both the sides of the pav.
  • Place the fried green chilli and batata vada in the center and serve hot.

 

For Burger Vada Pav

  • Take a pav, slice into half, apply mayonnaise on both the sides of the pav.
  • Place the sliced tomato, onion rings and sprinkle some dry garlic chutney on top.
  • Flatten the batata vada and place it in the center. Top it with mayonnaise and cheese slices.
  • Cover it with the other slice of the pav, serve hot with fried green chilli.
