तीखा मसालेदार चिकन भुना मसाला Chicken Bhuna Masala Chicken Recipe | Recipe - Ranveer Brar

Ingredients

For Marination

800 gms Chicken, curry cut, चिकन

Salt to taste, नमक स्वादअनुसार

2 tbsp Ghee, घी

1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर

½ tsp Turmeric powder, हल्दी पाउडर

1 tsp Coriander powder, धनिया पाउडर

1 heaped tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट

½ Lemon juice, नींबू का रस

 

For Masala

2 tbsp Coriander seeds, धनिया के बीज

1 tbsp Black peppercorns, काली मिर्च के दाने

2-3 Cloves, लॉन्ग

1 Black cardamom, बड़ी इलायची

2-3 Green cardamom, हरी इलायची

1 tsp Shahi jeera, शाही जीरा

Salt to taste, नमक स्वादानुसार

 

For Bhuna Chicken

2 tbsp Oil, तेल

1 tbsp Ghee, घी

1 Bay leaf, तेजपत्ता

½ tsp Black Peppercorns, काली मिर्च के दाने

2 Cloves, लॉन्ग

3 medium size Onions, chopped, प्याज

Water, पानी

Seared Chicken (bhuna), भुना चिकन

½ cup Curd, beaten, दही

2 tbsp Prepared masala, तैयार  किया हुआ मसाला

2 tbsp Coriander leaves, chopped, धनिया पत्ता

 

For Seared Chicken

2 tbsp Oil, तेल

1 tbsp Ghee, घी

Marinated chicken, मैरिनेटेड चिकन

 

For Garnish

Coriander sprig, धनिया पत्ता

Tomato, wedges, टमाटर

Green chilli, slit into half, हरी मिर्च

 

Process

For Marination

  • In a large bowl, add chicken, salt to taste, ghee, degi red chilli powder, turmeric powder, coriander powder, ginger garlic paste, lemon juice and marinate well.
  • Keep aside for further use.

 

For Masala

  • In a non-stick pan, add coriander seeds, black peppercorns, cloves, big cardamom, green cardamom, shahi jeera.
  • Dry roast on low flame until the spices turn aromatic.
  • Transfer it into a grinder jar and grind it into a fine powder. Keep it aside for further use.

 

For Bhuna chicken

  • Heat oil in a deep bottom pan, add ghee once it’s hot, add bay leaf, black peppercorns, cloves, onions and saute on medium flame until it’s light brown in color.
  • Add little water, seared chicken and cook on medium flame for 4-5minutes.
  • Add curd, prepared masala, coriander leaves and mix everything well.
  • Once the chicken is nicely cooked, serve hot with roti.
  • Garnished it with coriander sprig, tomato wedges, green chilli.

 

For Seared Chicken

  • Heat oil in a deep bottom pan, add ghee once it’s hot.
  • Add marinated chicken and seared it from all the sides properly.
