Surti Papdi Ki Tikki


Ingredients:

For tikki :
• 1 cup blanched surti papdi seeds
• ½ cup grated paneer
• 1 tbsp chopped coriander
• 2 tbsp finely chopped onion
• 1 tbsp chopped ginger
• 1 tsp chopped green chilies
• 1 wedge lemon juice
• Salt to taste
• 1 - 2 tsp red chili powder
• Cumin powder a pinch
• Raw mango powder a pinch
• 1 - 2 tsp gram flour
• 1 tbsp butter
• 1 tbsp oil

For salad :
• 1 cup beaten curd
• ½ cucumbers
• Salt to taste
• 1 wedge lemon juice
• 1 tsp roasted white sesame seeds
• Spring onion stalk as required

For garnish :
• Roasted papad as required
• 1 - 2 tsp chili flakes
• 1 - 2 tsp sesame seeds
• 1 sprig coriander

Procedure:
• In a bowl add blanched surti papdi seeds and mash them. Now add grated paneer, chopped coriander, finely chopped onion, chopped ginger, chopped green chili, lemon juice, salt, red chili powder, cumin powder, raw mango powder and mash again.
• Add gram flour and mix. Make tikkis of the prepared mixture.
• Heat butter and oil in a pan and shallow fry the tikkis. Remove them on tissue paper. To prepare salad; grate cucumber in beaten curd and mix.
• Add salt, lemon juice, roasted sesame seeds and chop spring onion stalk and mix. Further add crushed black pepper.
• For plating place tikki on a plate and add prepared salad.
• Place roasted papad on it and arrange one more tikki.
• Sprinkle sesame seeds and chili flakes. Garnish with coriander.
