Melting Moment Cookies


Ingredients:

• 100 gms butter
• 200 gms refined flour
• 75 gms custard powder
• 80 gms icing sugar
• 1 ½ tsp baking powder
• Refined flour to dust
• For butter cream icing
• 1 cup white butter
•½ cup icing sugar
• ½ tsp lemon rind
• 2 tsp lemon juice
• 2 tsp vanilla essence

To serve :
• 1 glass mango milkshake
• Mango wedge to garnish mango milkshake

Procedure:
• To prepare cookies in a bowl add butter, refined flour, custard powder, icing sugar, baking powder and mix well. Rest the dough for 5 minutes to rise.
• Arrange butter paper on a baking tray and dust refined flour.
• Make cookies and place them on a baking tray. Bake the cookies at 160 to 165 degree Celsius for 15 minutes.
• To prepare butter cream icing; in an electric whisk add white butter, icing sugar, lemon rind, lemon juice, vanilla essence and whisk. Remove the butter cream icing in a bowl and remove the baked cookies from the oven.
• Apply icing to the cookies and prepare a sandwich.
• Garnish the prepared mango shake with mango wedge. Serve this with the Melting Moment Cookies.
