Kolkata Fish Tikki


Ingredients:

• Floury potatoes boiled 1 gms
• Boneless rawas fish 100 gms
• Small green chillies,seedless and finely chopped 1 no
• Red onion finely chopped 1/2 no
• Ginger grated 5 gm
• Coriander leaves finely chopped 1 tsp
• Salt to taste
• Mustard oil 1 tbsp
• Mirepoix for boiling fish
• Black peppercorn 2 no
• Redonion 1/2 no
• Garlic cloves 2 no
• Lemon juice 1/2 no
• Bayleaf 1 no
• Egg yolk 1 no
• Madras curry powder 1 tsp
• Cumin powder 1 tsp
• Flour 1 tbsp
• Kasundi mustard 2 Tbsp

Procedure:
• Boil the water with mirepoix for few minutes .
• Add fish and simmer 5-10 minutes till fish fully cooked. Drained and remove mirepoix.
• Heat oil,sautι the chillies,onion,and ginger till tender.
• Rub the boiled fish using palms to make small flakes.
• Mix the fish with ginger-chilli mixture,turmeric& cumin powder,salt ,egg yolkand,chopped coriander. Refrigerate for 30 mins.
• When ready,form the mixture into patties,flour lightly and panfry in a layer of hot oil until crusty all over.
