Japanese Beetroot Salad


• 2 cup sushi rice
• 1 ½ tbsp green chutney
• 1 tsp wasabi
• 2 nori sheets
• 3 - 4 uble hue beetroot
• Salt to taste
• Crushed black pepper to taste
• 2 tsp rice vinegar
• 1 tsp oil
• 2 tsp chopped spring onion stalk
• 2 tsp chopped cabbage
• ½ lemon juice

• In a bowl add the sushi rice, green chutney and wasabi and mix.
• Add the sushi rice filling on the nori sheets and spread evenly. Roll the sheets with a sushi mat. Make one more roll.
• Cut the boiled beetroots and place them in a bowl. Add salt, crushed black pepper, rice vinegar, oil and chopped spring onion stalk and mix.
• Cut the sushi roll and place it on a plate along with the beetroot salad.
• In a bowl add the chopped cabbage, lemon juice, salt and wasabi and mix and add to the plate.
