Indian Style Breakfast Sandwich


Ingredients:

• Brown Bread Slices: 2 nos.
• Butter : as per taste
• Butter : 2 – 3 tbsp, to toast the sandwich

For Filling:
• Oil : 1 ½ tbsp
• Butter : 1 tsp
• Chopped Garlic : 1 tsp
• Chopped Onion : 1 ½ tbsp
• Cumin Seeds : 1 tsp
• Chopped Tomatoes : 2 tbsp
• Salt : to taste
• Chopped Ginger Juliennes : 1 ½ tsp
• Cumin Powder : 1 tsp
• Crushed Black Pepper : to taste
• Blanched Spinach Leaves : ½ bunch
• Grated Cheese : Ό cup

For Batter :
• Gram Flour : ½ cup
• Chopped Coriander : 1 ½ tbsp
• Chopped Green Chilli : 1 tsp
• Turmeric Powder : 1 tsp
• Red Chilli Powder : 1 tsp
• Salt : to taste
• Tamarind Chutney : to serve

For garnish:
• Lettuce Leaves : as required
• Lemon Juice : ½ no.
• Coriander : 1 sprig
• Red Chilli Powder : a pinch

Procedure:
• To prepare the filling, heat oil. In this add butter, chopped garlic, chopped onions, cumin seeds, chopped tomatoes, salt, ginger juliennes, cumin powder, crushed black pepper and mix well. Chop the blanched spinach leaves and add to the pan.
• Add grated cheese to the filling and mix well.
• To make the batter; in a bowl add gram flour, chopped coriander, chopped green chillies, turmeric powder, red chilli powder, salt, water and mix well. Keep the batter to rest.
• Apply butter to the brown bread slices and add the filling to it.
• On a pan add butter; Coat the prepared sandwich in the batter and cook it for 2 to 3 minutes on both the sides.
• Remove from pan and cut into triangles.
• Serve with tamarind chutney.
• For garnish sprinkle lemon juice on the lettuce leaves, arrange coriander on it and place this on the sandwich. Sprinkle red chilli powder.
