Carrot & Coconut Lapsi


Ingredients:

• Ghee:2 - 3 tbsp
• Broken Wheat: ½ cup
• Grated Carrot: ½ Cup
• Grated Coconut: Ό cup
• Coconut Milk: 1 cup
• Sugar:3tbsp

For Rice Mixture:
• Boiled Rice : 1 cup
• Boiled Corn : 2 tbsp
• Chopped Coriander : 2 tbsp
• Chopped Green Chillies : 1 tsp
• Chopped Onions : 1 ½ tbsp
• Salt : to taste
• Roasted Cumin Powder : 1 tsp
• Red Chilli Powder : 1 tsp
• Grated Cheese : 2 tbsp
• Grated Paneer : 2 tbsp /Paneer : 2 tbsp
• Bread Crumbs : 2 tbsp

For Garnish :
• SlicedCarrot:1 no.
• Sliced Coconut:½ cup
• Cardamom powder: ½ tsp
• Coconut Milk:1 tbsp
• Pistachio slivers& Almond: As required
• Mint leaves – 1 sprig

Procedure:
• Take a pan, add ghee and heat it.
• Add the broken wheat and pan roast till it turns golden brown.
• Add grated carrot, grated coconut to the broken wheat.
• Add some water, stir for a while • Mix well with coconut milk and grated coconut.
• Add sugar, water and cover the pan with a lid and let it cook for 5 mins
• To garnish: peel a carrot and cut into long, thin slices and cut the coconut into small thin slices.
• Add cardamom powder, coconut milk, mint leaves to the carrot peels and coconut slices
• To plate, take a ring mould and fill it with the Lapsi mix.
• Top the Lapsi with the garnish mix, sprinkle it with pistachio slivers and nuts. Top it a mint sprig
