Bottlegourd and Carrot Cake


Ingredients:

• 120 gms Walnuts (coarsely ground)
• 150 gms Whole-wheat Flour
• 50 gms Almond Meal
• 50 gms Ground Oats
• 6 gms Baking Powder
• 6 gms Baking Soda
• 6 gms Cinnamon Powder
• 3 gms Ginger Powder
• 3 nos Whole Eggs
• 150 gms Brown Sugar
• 150 gms Honey
• 100 gms Olive Oil
• 375 gms Grated Carrot
• 300 gms Peeled Grated Bottle Gourd (without the seeds)

Procedure:
• Put the grated bottle gourd in a muslin cloth and let it drain overnight in the fridge.
• In a mixing bowl with the paddle attachment, put all dry ingredients and let it mix thoroughly.
• Add in the honey to the dry ingredients, followed by the eggs gradually.
• Add the olive oil to the mixture and mix it thoroughly.
• Lastly add in the grated carrots and bottle gourd.
• Divide the batter into the prepared tins.
• Bake it 175 C for 25 - 30 minutes.
• Serve warm with low fat whipped cream.
