Banana Chocolate waffles


•6 ounces dark chocolate coarsely chopped
•1 cup 15% or 35% cream
•1/2 cup brown sugar
•2 cups milk
•4 eggs, lightly beaten
•1/2 cup brown sugar
•1/4 teaspoon ground cinnamon
•1/4 teaspoon vanilla extract
•1/3 cup cocoa powder

• In a saucepan, heat the first three ingredients over low heat, stirring frequently, until the chocolate melts. Set aside, this is your chocolate sauce.
• In a large bowl, whisk together the milk, eggs, brown sugar, cinnamon and vanilla.
• Add the flour and cocoa powder to form a dropping consistency batter.
• In a large waffle iron, melt half the butter until it foams add the waffle batter.
• Top each piece of waffle with caramelized banana slices and drizzle with warm (not hot) chocolate sauce.
