Steamed Corn Bread with mango,corn,avocado and

shrimp salad


Ingredients:

Preparation time- 25 min

For Corn Bread
• 150 gm Fresh corn chopped
• 30 gm Flour
• 10 gm Yeast
• 20 gm Butter
• 5 gm Salt
• 10 gm Sugar

For Salad
• 1 cup Corn blanched
• ½ no Ripe mango cut into dices
• ½ no Avocado cut
• 6 Shrimp cooked
• 1 no Red onion chopped
• 1 tsp Chopped basil
• 1 cup Arugula
• 5ml Lime juice
• 2 tbsp Olive oil
• Salt to taste
• 1 tsp Cumin powder
• Cucumber shavings

Procedure:
• Chop the fresh corn,mix together all ingredients .
• Moisten a cotton cloth and sprinkle with a light coat of flour and place in a colander.
• Pour the mixture into cloth and bind tightly, allow space for bread to rise.
• Use buttered tins and allow mixture to stand till bubbling and started rising.Cover tightly.
• Steam for 2 - 2.5hrs
• Serve hot.

For Salad
• Make a dressing with olive oil,salt,cumin powder and lime juice.keep a side.
• Mix together salad ingredients and dress with above dressing. Assemble
• Cut the bread into small roundels and glaze with butter .
• Keep the cucumber shavings fill with prepared salad on corn bread and finish with a piece of shrimp.
