Spinach Moongudi Chaat


Ingredients:

• ½ cup soaked whole green gram
• 4 - 5 spinach leaves
• 1 tsp chopped ginger
• 2 tsp chopped coriander
• 1 tsp chopped green chili
• 1 ½ tbsp yoghurt
• 1 tbsp gram flour
• Salt to taste
• Oil to fry
• 1 boiled potato
• Salt to taste
• ½ tsp chaat masala
• 1 tsp chopped coriander
• 1 tsp chopped onion
• ½ lemon juice
• ½ tsp red chili powder
• ½ tsp tamarind chutney

To serve :
• Yoghurt as required
• ½ tsp red chili powder

For garnish :
• 1 lemon wedge
• Coriander leaves as required

Procedure:
• Add the soaked whole green gram in a mixer and blend. Remove in a bowl.
• Chop the spinach leaves and add to the bowl. Add chopped ginger, chopped coriander, chopped green chili, yoghurt, gram flour and salt and mix.
• Taking small portions fry the moongudi in hot oil and then remove on a tissue paper.
• Fry the fried moongudi again in the hot oil till it turns crispy and then remove on a tissue paper.
• Cut the boiled potato and fry it in the hot oil. Remove these on a tissue paper.
• Remove the fried potato and moongudi in a bowl and add salt, chaat masala, chopped coriander, chopped onion, lemon juice, red chili powder and tamarind chutney and mix.
• Add this mixture on a skewer stick.
• Add yoghurt and red chili powder on a plate and place the skewer sticks.
• Garnish with lemon wedge and coriander leaves.
