Papaya Melon Salad Thai Style with Soy Steamed

Peanuts


Ingredients:

Pallavi's Recipe
• Papaya, small scoop- 1 cup
• Melon, small scoop- 1 cups
• Watermelon, small cubes- 1 cup
• Basil leaves, julienne/ Coriander, chopped- 1 tbsp

Thai Dressing :
• Fresh lime juice- 2 tbsp
• Lemon rind- 1 tsp
• Honey- 2 tbsp
• Rice vinegar- Ό cup
• Fish sauce/ soy sauce- 1 tsp
• Fresh ginger, grated- 1tsp
• Fresh red chilies, chopped - 1 no
• Roasted sesame seeds- 1 tsp

Soy Steamed Peanuts;
• Peanuts, soaked overnight, drained- 2 cups
• Fresh red chilies, chopped- 1 tsp
• Garlic, chopped- 1 tbsp
• Ginger, chopped- 1 tsp
• Celery, chopped- ½ tbsp
• Onion, chopped- 1 medium
• Salt- to taste
• Soy sauce- 1 tbsp
• Thai red curry paste- 1 tbsp
• Five spice powder- 2 tsp
• Coriander leaves, chopped- 1 tbsp
• Rice vine vinegar- 1 tsp
• Brown sugar- 1 tsp
• Lime juice- ½ no

Procedure:
• Scoop out balls of all the fruits using small scoop. Keep aside.
• In small pan add rice wine vinegar and little water, bring it to boil. Now add fresh red chili, ginger.
• When reduce keep aside to cool down and stain.
• In mixing bowl add vinegar, fish sauce, lemon rind, lime juice, sesame seeds and honey. Mix well.
• Toss fruit balls in dressing and sprinkle basil julienne and stir gently.
• Serve chilled.

For spicy Ladoo:
• Soaked peanuts in water overnight. Wash and drain water completely.
• In bowl add all spices and sauces and mix well. Put this mixture on banana leaf and fold into parcel.
• Keep in steamer and steam about 20 minutes.
• Serve small quantity in bowl and top with chopped coriander leaves.
