Paneer Shashlik with Apple and Plum Chutney


Ingredients:

• 200 gms Paneer, cut into cubes
• 1 medium Onion, cubes
• 1 no Red bell pepper, diced
• ½ no Yellow bell pepper, diced
• ½ no Capsicum, diced
• 10 no Satay sticks

For Marinade: :
• 2 tsp ginger-garlic paste
• 4 green chilies chopped
• 1 cup fresh curd
• 1/2 tsp honey
• 1/2 tsp carom seeds powder
• 1/2 tsp red chili powder
• 1/2 tsp turmeric powder
• 2 tsp tikka masala powder
• 1/2 tsp lemon juice
• Salt to taste

Procedure:
• Mix all the ingredients of marinade in a big bowl and add pieces of paneer, onion and bell pepper in it.
• Coat the vegetables very well in marinade, cover and keep this marinated paneer in refrigerator for about an hour.
• After that bring the mixture at room temperature.
• Preheat the oven for 4 minutes at 300 degrees F.
• Thread the pieces of paneer and veggies onto the skewers.
• Brush with some oil.
• Place the skewers in preheated oven and baked for about 20 minutes, till the paneer and vegetables turns little brown and gets cooked.

Apple, Plum And Tomato Chutney:
• 1 cup chopped and pitted plums
• 1/2 cup chopped and peeled apple
• 1/2 cup chopped tomato
• 1/2 cup apple cider vinegar
• 1/2 cup honey
• 1/2 cup onion, chopped
• 1 tsp finely orange zest
• 1 clove garlic, minced
• 1 tsp grated fresh ginger
• 1/4 tsp Chinese Five Spice seasoning
• 1 pinch ground cinnamon powder
• 1/2 tsp salt
• 1/2 tsp pepper

Procedure:
• Chop the plums, apple, and tomatoes and combine in a small bowl. Chop the onion, orange zest and mince the garlic and ginger; add these to the bowl.
• In a medium saucepan, heat the apple cider vinegar and honey until boiling.
• Add the fruit mixture and remaining spices.
• Stir continuously over medium-high heat for about 15 minutes while the chutney reduces and thickens. Turn down the heat if necessary.
• Thread the pieces of paneer and veggies onto the skewers.
• Taste and adjust spices as you desire.
• Let the chutney cool slightly and then serve with paneer shashlik.

Notes
• Cut the plums skin-side-down, and use a sharp knife. This will ensure a clean cut. Otherwise the skin will detach from the fruit.
