Pear and Spinach Salad


• Pear, cut into half 3 no
• Baby Spinach leaves 2 bunch
• Parmesan shavings ½ cup
• Butter ½ cup
• Sugar 1 tbsp
• Red wine ½ cup

For Dressing :
• Olive oil Ό cup
• Chopped onion 2 tbsp
• Dijon mustard 1 tsp
• Red chili powder 1 tsp
• Lime juice 1 tsp
• Garlic 1 clove
• Black pepper ½ tsp
• Focassia croutons ½ cup
• Grated parmesan cheese 1 tbsp

• Bring first red wine, Butter and sugar to boil in large wide saucepan over medium-high heat, stirring until sugar dissolves. Add pear halves, cut side down. Return syrup to boil. Reduce heat to medium-low; simmer uncovered until pears are tender, 20 to 25 minutes. Cool completely. Cover and chill.
• Drain pears. Cut each pear half lengthwise into thin slices. Gently press on pear halves to fan slightly.
• To prepare dressing in blender add all the dressing ingredients and blend it well.
• Make croutons of focassia bread in oven. Topped it with grated parmesan.
• In mixing bowl, add baby spinach, poached pear slice and coat this with dressing gently.
• Garnish with parmesan shavings and focassia croutons.
