Jhalmoori Salad With Pickled Grilled Watermelon


Ingredients:

For jhaal muri salad
• 1 cup Muri (puffed rice)
• ½ cupPuffed jawer
• 2 tbspWhole Bengal gram (boil)
• 1 tbsp Roasted peanut (skinned)
• 1 tbsp Sev (Bengal gram vermicelli)
• 1 tbsp Fresh coconut (thinly sliced)
• 1 no Green chilli (finely chopped)
• 1 no Onion (finely chopped)
• 1 tbsp Fresh coriander leaves (chopped)
• 50 gm Boil potato (cut into small cube)
• 50 gm Cucumber (chopped)
• 50 gm Tomato (cut into small cube)
• 1 tsp Mustard oil
• 1 tsp Roasted cumin powder
• ½ tsp Black salt
• ½ tsp Chaat masala
• 1 no Lemon wedge

For water melon and goat cheese sandwich
• 1 no Water melon
• 50 gm Goat cheese
• 2 tbsp Fresh mint chopped
• 300 ml Apple juice
• 20 ml Red wine vinegar
• 3 no Fresh basil leaves (torn)
• 1 tbsp Sugar
• Salt and pepper as required

Procedure:
For jhaal muri salad:
• Take a mixing bowl put all the ingredients except lemon wedge.
• Squeeze the lemon wedge on top and mix well.

For water melon and goat cheese sandwich
• Peel and cut the water melon into ½ inch thick and 2 ½ into 3 ½ inch wide.
• Make brine with apple juice, red wine vinegar, sugar, salt, pepper and 1 tbsp fresh mint.
• Soaked the water melon in to the brine for 30 minutes.
• In a bowl mix the goat cheese with 1 tbsp mint chopped and a pinch of crushed black pepper.
• Remove the water melon from the brine and grill on the hot griller.
• Spread the goat cheese on the grilled water melon and cover it with another water melon and make sandwich.
• Serve the jhaal muri salad along with the water melon and goat cheese sandwich.
